I've been using this 74% chocolate for dipping strawberries and it hardens with a beautiful snap, not tacky at all. The flavor has that deep, slightly bitter edge I look for in dark chocolate.
Melting this for a ganache was a breeze—it turned glossy and smooth in about three minutes, no seizing at all. The 74% cocoa gives it a deep, rich bite that actually satisfies my chocolate cravings without needing anything else. I’ve already used half the bar just for snacking.
The 74% cocoa content is spot-on for baking – it holds its shape when melted for moulding and sets with a nice snap. I used it to enrobe some truffles and honestly ate half the block straight from the bowl before they were done.
